This is one of our favorite cold weather recipe’s! It not only delicious, but very filling and super easy to make! Here’s the recipe and instructions! Enjoy!
4 cups chicken broth
4 cups peeled, cubed potatoes (I like to make sure they are all the same size)
1/4 cup minced onions
1/2 tsp. season salt (Lawry’s brand is best)
1/4 tsp. white pepper
1/4 tsp. ground red pepper (half if you don’t like it too spicy)
1 8oz package of cream cheese (cut into chunks)
Combine everything into a large pot except the cream cheese. (Let it sit out to soften). Boil on medium heat until potatoes are tender. *Do not let them get mushy. Smash a few potatoes with a fork against the side of the pot to help make the soup thicker. Do this until it gets to your desired thickness. Reduce to low heat. Add cream cheese and stir a bit until it melts (takes about 5-10 minutes).
*I usually only boil for about 10-15 minutes. 15-20minutes with a double batch.*
*You can add toppings you like as well such as fresh bacon bits, cheese, or chives!*
