Gardner Instant Pot and Slow Cooker Taco Soup Recipe

This is a recipe that stems from Ashley’s family. Of course, it has been perfected by the Gardners though! LOL. Quick and Easy, this is a delicious meal the whole family will love, especially heading into the colder months! I’ll give instructions for both Instant Pot and Slow cooker for those of you who may only have one or the other!


1 pound of hamburger meat (I like to buy the 93/7, it seems to have a much better flavor!)

2 cans of diced tomatoes

1 can stewed tomatoes

2 cans of chili beans ( we’ve found western family to be the most flavorful)

1 can of corn

1 small can of Green Chiles

1/2 of an onion (diced)

1 packet of taco seasoning

chili powder (to liking)

Optional Toppings the Gardners Use:


Sour Cream

Shredded Cheese

Instant Pot Instructions:

Saute hamburger meat with taco seasoning and diced onion until brown in the Instant Pot. Once meat is browned, add all other ingredients into the Instant Pot. Press Manual, and cook for 15 minutes. Once timer is good, we always let it slow steam for another 15-20 minutes. You can add chili powder to your liking before cooking to get a better flavor. This takes a few times to perfect, as we don’t really measure this, just add what we think will be good. That’s how my grandma cooked! After that, it is ready to enjoy with your added toppings! This is why we love the Instant Pot!  A delicious home cooked Dinner is ready within a few short minutes!

Slow Cooker Instructions:

Brown hamburger meat, onion and taco seasoning on the stove top. Add to the slow cooker. Stir in all other ingredients. Cook on low for 5-6 hours, stirring occasionally. When finished, add toppings you like and enjoy! Great way to cook if you’re going to be busy for several hours and don’t want to hassle with dinner at the actual dinner time!
