Everyone has been asking me about this recipe ever since I made it in this vlog. My sister Leslie introduced this one to us a few years back and we have been making it ever since. It is one of those fast easy delicious recipes. Everyone here already knows that I do not cook, so if you see me cooking something then you know that it must be easy and fast to cook.
This recipe takes the amount of time it takes to make rice.
First put rice on to cook….I only use a rice cooker because I wouldn’t be able to make it any other way.
Combine and cook in a skillet until the sauce is clear and thick:
1 can 20 oz Pineapple Chucks and Juice
1/3 c. vinagar
6 T. Sugar
1 T. Soy Sauce
3-4 T Corn Starch miced into 1/3 C Water
25-30 Italian Meatballs (I buy frozen from the store, My sis makes them homemade)
1 Onion chopped, add to above and simmer 10 minutes
2 Green peppers cut into strips, add to above and simmer 5 minutes
3 Tomatoes cut into wedges, stir into above and serve immediately over rice.
This recipe is super quick and easy and everyone I have ever made it for loves it! It never disappoints! I hope you all love this recipe as much as we do. I know the girls sure did gobble it up.
